Lemon Creme Fraiche Pasta

1 cup or so of pasta (I used shells)
1/2 cup creme fraiche
1 lemon
Pinch of salt (I used garlic sea salt)
Handful of Kalamata olives
Handful of cherry tomatoes (mine were fresh from the garden)
Handful of basil
1/2 cup or so Asiago

  1. Boil water for pasta. Throw in a dash of salt. Add pasta when water boils. Cook as long as package directs. Mine took ten minutes.
  2. While pasta is cooking, squeeze lemon into a bowl. Stir in creme fraiche. Add a pinch of salt. Can you imagine an easier sauce?!
  3. Prepare mix-ins: slice tomatoes in half, chop olives, chop basil, grate cheese.
  4. Drain water from pasta. Add pasta to lemon sauce and toss well. Add mix-ins. Voila! You’ve made dinner while on the phone with mom. 🙂

Guten Appetit!
