Stir fry was one of the very first things I learned how to cook in my college apartment. I was hesitant to cook meat at first so I used pre-cooked chicken, making this a great gateway recipe for beginners! I’ve since upgraded my stir fry with homemade teriyaki sauce and crunchy sesame seeds.

I served this recipe at Disney Dinners: Mulan and it was such a hit that guests had second helpings. That’s the best compliment you can give a hostess! It’s such an easy thing to serve at a party because your starch, vegetables, and protein are all in one bowl, making clean up a snap. Stir fry is also an inexpensive way to feed a crowd. I can’t believe I ever stopped making it!
This is easy entertaining at its finest and is truly one of the simplest dinners you can make. Give it a whirl and see for yourself! Also, don’t be intimidated by the ingredients. I found everything for this including Mirin for teriyaki sauce in the Asian aisle of my local grocery store. No trip to a specialty store is necessary!
You really want to make sure your chicken has a nice golden color before adding the other ingredients. The broccoli and snow peas cook for hardly any time at all. If you’re not a noodle fan, feel free to sub out rice. From the start of the chicken to the first bite, this is probably ten minutes. No more than fifteen!
Not: I doubled this recipe for Mulan and cooked two pans of stir fry so as to not overcrowd and steam the food.
Chicken and Vegetable Stir Fry
1/2 bag Udon noodles
1 Tbsp vegetable oil
1-1.5 lbs chicken breast cut into bite-sized pieces
1 red bell pepper, cut into piece
1 broccoli crown, cut into florets
1/2 bag snow peas
3-4 green onions
Homemade teriyaki sauce, recipe follows
- Make teriyaki sauce. Let cool on the stove while you make stir fry.
- Cook udon noodles according to package directions (typically 3-4 minutes in boiling water). Drain, rinse with cold water, and set aside until ready to use.
- Heat vegetable oil in a large wok or skillet. Add chicken and cook over medium heat for 2-4 minutes, flip and cook for an additional 2-4 minutes or until cook through a nice brown color on each side.
- Add red bell pepper. Cook for a minute or two.
- Add broccoli and snow peas. Cook for just a minute. Turn down that to low and add teriyaki sauce sauce and noodles. Stir just until coated.
- Serve with sliced green onions and sesame seeds.
1/2 cup soy sauce
1/4 cup brown sugar
1/2 Mirin (found in the Asian section of the supermarket)
1/4 cup sake or white wine
Optional: 1 tsp chopped ginger, 1 tsp chopped garlic
- Mix all ingredients in a sauce pan. Bring to boil over medium-high heat. Reduce heat and simmer for 20 minutes.
- Remove from heat and let cool. Use immediately or keep in the fridge until ready to use.
