An impressive weeknight recipe that takes just fifteen minutes!

My regular readers know how much I love fast and easy recipes that require little clean up. I’ve been making this crowd pleaser all summer long, particularly when I have really good tomatoes from the farmers market. I often pick up meat from the farmers market but sometimes it’s midweek and I’m craving chicken and run to my local Tom Thumb store for some organic chicken. So when Tom Thumb reached out and asked if I would be interested in an O Organics® Air Chilled Chicken collaboration, I knew a fast but elegant weeknight chicken recipe would be perfect!

Air-chilled chicken is individually processed in cold chambers with purified air, which results in mouth-watering chicken. The chicken’s flaxseed diet boosts the Omega-3’s by up to 350% and lowers the cholesterol level of the meat by as much as 40%. The chickens are cage free and have a balanced diet that makes them lower in saturated fat than typical chicken. Most importantly to me, the chicken is super juicy and tender meaning you don’t have to do a heck of a lot to it to have a great meal, which is why I chose something so simple!

All you need for this recipe is 1 pack of O Organics Air Chilled Chicken Breast, seasoning, a couple slices of good mozzarella, one tomato, and fresh basil. (If you don’t grow basil, you absolutely should. There’s nothing like plucking fresh basil from the garden in the summertime!) You can either make a balsamic reduction by heating balsamic vinegar in a small sauce pan over medium heat until reduced by half or buy a great reduction to keep in the pantry. (This is a weeknight meal, after all!) In a pinch, you could drizzle the chicken with balsamic vinegar and olive oil, as you would caprese salad, but the reduction is thicker and more intense, giving this dish more a restaurant spin.

As for the seasoning, I don’t measure seasoning when I’m grilling. That was one of my biggest hangups with savory recipes when I started The Rose Table until my mom finally said, “Why are you trying to measure as you go? You don’t measure when you’re throwing stuff on the grill. Go with that.”  You want the chicken thoroughly coated in dried basil, garlic powder, salt, and pepper. Every bite should be seasoned. Massage it all in with olive oil and for heaven’s sake, don’t measure that either.

What’s better than biting into juicy chicken, summer tomatoes, and melty mozzarella? Maybe the fact that this takes fifteen minutes to make! (Not including of course that you should set the chicken on your counter about twenty minutes before you want to throw it on the grill.) I hope you want to make this over and over again!

Grilled Chicken Caprese

Serves 2
2 O Organics Air Chilled Chicken breasts
Sea salt, pepper, basil, garlic powder for seasoning
2 thick mozzarella slices

2 thick tomato slices
Fresh basil
Balsamic reduction, store bought or homemade*
Rice for serving

  1. Rinse chicken breasts and pat dry with paper towel. Season well with garlic powder, freshly ground sea salt and pepper, and dried basil. Massage with olive oil.
  2. Preheat grill to 375 degrees. Toss tomato slices with equal parts olive oil and balsamic (about 1/2 Tbsp each).
  3. Grill chicken 5-6 minutes per side. Top with mozzarella slices for the last two minutes. Grill until cheese is melty and internal temperature of chicken reaches 165 degrees.
  4. Remove from grill. Top with marinated tomato slices. Sprinkle with hand torn basil. Drizzle with balsamic reduction. Serve over rice.

*To make balsamic reduction: heat balsamic vinegar over medium heat until reduced by half. Let cool.
