Grilled Potatoes

One of my all-time favorite side dishes!
I can’t even count how many times I’ve grilled potatoes. Hundreds? Thousands, even? It’s one of my go-to side dishes when I’m grilling. It’s so easy, I don’t even think twice when I’m doing it. This is one of my many non-recipe recipes in which I don’t include any quantities.

I often grill a single packet for myself and I’ve grilled as many as six packets at once. Just spry a sheet of foil with nonstick spray, cut a Yukon gold potato (by far the best potato for grilling) in equal chunks (I like two cuts lengthwise and then four cuts the other way), and toss with olive oil, sea salt, pepper, and dried oregano. Toss them on the grates and grill for 30 minutes, flipping once. If they’re done perfectly, they should be a little dark and crispy on the edges and nice and soft on the inside.

At Disney Dinners: Hercules, I paired grilled potatoes with my Lamb Lollipops and smothered the whole dish with Feta Cheese Sauce. I highly recommend trying that!
