Creamy mac ‘n’ cheese with just five minutes of prep!
If you’re looking for a super simple, hands-off mac ‘n’ cheese recipe, this is it. It’s quite possibly the creamiest mac ‘n’ cheese you’ll ever have.
In Texas, you most often see baked mac ‘n’ cheese with a crunchy bread crumb topping. Since I was baking bread cones in the oven at Disney Dinners: Cars, I was determined to make mac ‘n’ cheese in my crockpot, like they do in the midwest. My favorite part about this recipe is that you don’t have to boil the noodles before making it. You put dry noodles in the crock pot and two hours later, voila! A whole crock pot full of perfect mac ‘n’ cheese. It’s absolutely magical.

This would be awesome with different cheese combos and I’m sure I’ll post variations over the years, but this is a winning combination. If you think my palette is about Velveeta, you’re wrong. I will never not love Velveeta in a recipe that involves melted cheese. It’s just so creamy. Pair that with crispy cherrywood smoked bacon and herby Cotswold cheddar and you have yourself a rockstar dish.

Crockpot Bacon Mac ‘n’ Cheese
Serves 6-8
1 can evaporated milk
2 1/2 cups milk (I use 1%)
1/2 tsp paprika
1/2 tsp garlic powder
16 oz (1 lbs) elbow macaroni (uncooked)
8 oz Velveeta cheese
4 Tbsp butter
1 cup grated Cotswold cheddar
1/4 cup grated Parmesan
4 strips bacon, cooked and crumbled (I always use HEB cherrywood smoked bacon)
- Whisk together milk, paprika, and garlic powder in a crock pot. Add macaroni, cubed velveeta, butter, grated cheddar, and Parmesan.
- Cook all ingredients on low for 2-2.5 hours. (Perfect at 2 hours, 15 minutes, in my opinion.) Stir every 15-20 minutes.
- Just before serving, stir in crumbled bacon.
