The greatest alfredo sauce in the history of pasta

This is one of the most whimsical dishes I’ve come up with to date. When Marvel Studios approached me about a Captain Marvel dinner party, I wondered how on earth I could come up with dishes that make sense. I immediately thought of alfredo sauce when I saw her blue blood, which is a major plot point in the film. Tinting alfredo sauce to your desired color is a great party hack to keep in mind. Wouldn’t red alfredo sauce be perfect for a vampire dinner? Hmm…

Anyway, I don’t want to be too hyperbolic here, but this is the greatest alfredo sauce of all time. My dad even said so and he does not dole out compliments easily. The secret ingredient is gruyere. Practically every alfredo sauce on the internet uses only parmesan cheese. I told my mom that and said, “I really think gruyere would be better. Should I try it even though no one else apparently makes alfredo sauce with anything but parmesan?” To which she replied, “Since when have you cared what other people do?” Touche!

I’ve never been a huge fan of alfredo sauce. I always find it too thick or too rich but this is truly the perfect balance: it’s creamy, flavorful, and a little nutty in flavor from the gruyere and a grating of nutmeg. My Captain Marvel guests raved about the sauce. One friend said she could eat it with a spoon. Another said she’d buy five jars then and there. And one’s husband is a major comic book fan and remarked the sauce was in fact the exact shade of Kree Blood Blue.

Now I must warn you: this does not heat up well in the microwave. No cheese sauce will. Heat leftovers low and slow on the stove for the best results – that is, if you can stand to have any leftover!

Bonus: serve this with garlic toast cut in half, not diagonal, because Nick Fury can’t eat it that way.

Kree Blood Pasta

1 pound penne pasta, cooked according to package instructions
1/2 cup unsalted butter
2 garlic cloves, minced
1 1/2 cups heavy whipping cream
1/2 tsp salt
1/4 tsp pepper
1 cup freshly grated parmesan cheese
1 cup freshly grated gruyere cheese
1/4 tsp freshly grated nutmeg
Blue food coloring

  1. Melt one stick (1/2 cup) unsalted butter with minced garlic over low heat. Add heavy whipping cream, salt, and pepper, and stir until uniform in color.
  2. Add parmesan and gruyere and whisk over low heat until cheesy is completely melted. 
  3. Add blue food coloring tint sauce desired shade of blue.
  4. Grate fresh nutmeg into the sauce, whisk, and add cooked penne pasta, using tongs to carefully coat the noodles with the sauce. Serve immediately.
