Watermelon Feta Checkerboard Salad

A whimsical summertime salad

This is a great way to impress you guests! There’s just something about watermelon, mint, and feta cheese. I grow English mint in my garden and just swoon over this flavor combination. As for the balsamic reduction, you can either reduce balsamic vinegar in a saucepan over medium heat or buy a good quality balsamic reduction at your local grocery store.

Please make this when watermelon is at its best. It will only be as good as the watermelon you choose. I’ve waited all summer for the perfect watermelon to make this salad. I love the small striped watermelons but use whatever strikes your fancy.

Pro tip: to safely cut a watermelon into slices, slice the watermelon in half, then cut one side of the circle so that you can stand the watermelon securely on your cut rather than have it wobbling around.

Don’t want to make a checkerboard? No problem! Toss it all in a bowl. I won’t judge. I ate this for lunch the day after serving this for dinner and I ate it tossed together in a bowl. It tastes the same either way, but the checkerboard is so fun when you have company!

Watermelon Feta Checkerboard Salad

Per salad:
1 slice watermelon
2 oz Feta cheese (in block form, not crumbles)
Drizzle balsamic reduction
1 mint sprig*

  1. Slice feta in half lengthwise. Cut pieces into cubes.
  2. Use a piece of feta to determine the thickness of your watermelon slice. Set feta chunk on top of sliced watermelon to use a stencil. Cut watermelon into chunks.
  3. Drizzle balsamic reduction on plate. Arrange watermelon and feta chunks in alternating pattern. Top with a mint sprig. Serve immediately.
    *Don’t just use the mint for garnish! Have guests tear the mint over the salad.
