Prosciutto Wrapped Asparagus 

Something magical happens to prosciutto in the oven. It gets even fancier. I cut each prosciutto slice in half lengthwise, wrap two asparagus spears into snug little packages, drizzle with olive oil, grind a little black pepper on top, and toss them in the oven for 10-15 minutes until they’re done to my liking. They’re so easy, you’ll want to make this again and again to impress company!

Prosciutto Wrapped Asparagus 

This is a fantastic recipe for entertaining because it’s as delicious at room temperature as it is warm from the oven, meaning it’s something that can easily sit out for several hours. Hell, I even like it cold straight out of the fridge the next day!

I’ve been serving these for years but finally decided to post my “recipe” (if you can call it that!) as part of my SIX the Musical  party to be Anne Boleyn’s dish multiple songs reference her “green sleeves.”

Prosciutto Wrapped Asparagus 

You don’t need to measure here so I didn’t include amounts. You can make as much or as little as you want. Just wrap prosciutto around asparagus spears, drizzle with olive oil, hit it with a little pepper, and pop in the oven for ten minutes. BOOM. Your friends will think you’re a genius.

1 bundle asparagus
Prosciutto
Olive oil
Pepper

  1. Preheat oven to 400 degrees. Snap the ends off of asparagus spears, rinse, and dry thoroughly.
  2. Cut prosciutto slices in half lengthwise. Lay prosciutto strips out on a board. Set two asparagus spears tightly together on one side of the strip and roll up with prosciutto so that prosciutto covers most of the asparagus. Set on a baking sheet, rub with olive oil, and grind a bit of black pepper on each bundle. 
  3. Bake for 10-15 minutes or until asparagus starts to crisp. Serve immediately – also great room temperature!

      I like easy too! If I see a recipe with 50 ingredients, I’m out. Another fun version of this is to sprinkle great melting cheese (such as fontina or gruyere) on the prosciutto before wrapping it up for cheesy prosciutto wrapped asparagus. 🙂
