Pongo and Perdita Salad for a 101 Dalmatians Party

What can I say. The Rose Table has gone to the dogs! I served this delicious salad as the first course at Disney Dinners: 101 Dalmatians. A simple salad of greens, blueberries, Marcona almonds, and feta cheese with maple vinaigrette is topped with incredible homemade, buttery asiago thyme crackers. Delicious!

I wanted a salad that would be nice and cozy for our English countryside thing. I immediately thought of my maple vinaigrette and I thought blueberries would be perfect since they’re sort of like dalmatian spots! I built the salad on a big platter, then plated individual portions.

Be warned: the crackers are addictive.

Pongo and Perdita Salad

Salad greens
Blueberries, rinsed and dried
Marcona almonds
Feta cheese
Maple vinaigrette (recipe here)
Dog Bone Crackers (recipe here)

  1. Arrange salad greens on a platter. Toss greens with maple vinaigrette. Top with blueberries, chopped Marcona almonds, and crumbled feta cheese. Arrange dog bone crackers on top.
