Something cute and easy for Christmas! This is a great recipe for beginner cooks. I used green spinach tortilla roll ups arranged in a Christmas tree shape for a cheerful holiday appetizer.
The filling is delicious! How can you go wrong with bacon and cream cheese? I used fresh herbs from my garden, Kalamata olives, and sweet red peppers (though I normally use roasted red bell peppers). You want the kind that come in a jar – not fresh red peppers. (You want them soft, not crunchy.)
I used some thin pre-sliced cheddar cheese to make a star on top and a couple of star ornaments on the “tree.” I’m sure the little chefs in your life would love helping you cut out shapes for the tree! I know little Rose Table would have adored this recipe. 🙂
Tortilla Roll Up Christmas Tree
3 strips thick-cut bacon
5 medium or 2-3 large spinach tortillas
8 oz cream cheese, at room temperature
1/3 cup roasted red peppers or sweet red peppers, chopped
1/4 cup kalamata olives, chopped
1/4 cup combo of fresh Italian parsley and oregano, chopped
3 slices cheddar cheese
- Cut bacon into lardons and fry in a nonstick skillet until crispy. Remove with a slotted spoon to a paper towel to drain excess fat.
- Combine cream cheese, peppers, Kalamata olives, fresh herbs, and bacon. (If your cream cheese is soft enough, you can easily do this with a spatula.)
- Lay a tortilla on a cutting board. Spread mixture thoroughly on tortilla, thickest on the end you are rolling. Roll the tortilla up and slice into pinwheels. Repeat with remaining mixture. Set pinwheels on a board in a Christmas tree shape and garnish with cheese stars. Serve immediately or store in the fridge.
