White Chocolate Blondies

If you’re looking for the BEST blondies you’ve ever eaten, keep reading.

Let me start off by saying that I love any recipe that involves melted butter instead of softened butter. This batter takes mere minutes to make and you don’t even need a mixer. It’s a spoon-and-bowl situation.

I created these beauties for my Wicked Ball, inspired by the song “What is This Feeling” when Elphaba says, “BLONDE!” How could I resist?

The addition of white chocolate chips here is nothing short of perfection. White chocolate chips just belong in blondies. Half a cup of pecans would also be divine!

White Chocolate Blondies

1/2 cup unsalted butter, melted
1 cup packed dark brown sugar
1 egg, lightly beaten
2 tsp vanilla extract
1 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1 cup white chocolate chips

  1. Preheat oven to 350 degrees. Line an 8” square pan with parchment paper. Spray lightly with nonstick cooking spray. 
  2. In a large bowl, stir together melted butter and brown sugar until smooth. Whisk in egg and vanilla. Sift in flour, baking powder, and salt and stir just until combined. 
  3. Spread batter into prepared pan. Bake for 25-28 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  4. Cool for 20 minutes, then lift the blondies out of the pan. Set on a wire rack and cool completely before cutting.
