If you’re looking for the BEST blondies you’ve ever eaten, keep reading.

Let me start off by saying that I love any recipe that involves melted butter instead of softened butter. This batter takes mere minutes to make and you don’t even need a mixer. It’s a spoon-and-bowl situation.

I created these beauties for my Wicked Ball, inspired by the song “What is This Feeling” when Elphaba says, “BLONDE!” How could I resist?

The addition of white chocolate chips here is nothing short of perfection. White chocolate chips just belong in blondies. Half a cup of pecans would also be divine!

White Chocolate Blondies
1/2 cup unsalted butter, melted
1 cup packed dark brown sugar
1 egg, lightly beaten
2 tsp vanilla extract
1 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1 cup white chocolate chips
- Preheat oven to 350 degrees. Line an 8” square pan with parchment paper. Spray lightly with nonstick cooking spray.
- In a large bowl, stir together melted butter and brown sugar until smooth. Whisk in egg and vanilla. Sift in flour, baking powder, and salt and stir just until combined.
- Spread batter into prepared pan. Bake for 25-28 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool for 20 minutes, then lift the blondies out of the pan. Set on a wire rack and cool completely before cutting.
