Looking for a healthy sweet treat? Make this Pistachio Date Candy immediately! These little cuties taste even better than a candy bar and they’re quite good for you. Plus, they’re easy to make!

If you’ve never tried date candy, you’re in for a real treat. Dates already have a caramel-like flavor and tons of natural sweetness but they are positively transformed by peanut butter, chocolate, and a bit of sea salt. Mamma Mia!

Dates are high in fiber and antioxidants and give you a ton of energy. Paired with protein-packed peanut butter and a bit of pure dark chocolate, this is one nutrient-dense little candy!

There’s just something about pistachio and chocolate that gets me going. It’s such an underrated pairing! I hope you love this easy no-bake treat as much as I do. The recipe easily doubles!

Pistachio Date Candy
12 Medjool dates
1/4 cup peanut butter
2-3 Tbsp pistachios, chopped
4 oz semi-sweet baking chocolate
Sea salt (I used French grey)
Optional: 2 tsp vegetable shortening
- Stuffed pitted Medjool dates with a spoonful of peanut butter.
- Finely chop chocolate and place in a heatproof bowl with vegetable shortening (if using). Microwave at half power for 1-2 minutes, stirring every thirty seconds until smooth and glossy.
- Spoon chocolate over dates one at a time. Shake off the excess and set finished treats open-side down on a baking sheet lined with wax paper.
- Sprinkle chocolate-covered dates with chopped pistachios and sea salt. Let sit at room temperature for one hour to firm up, then enjoy! Store in an air-tight container at room temperature.
Happy no-baking,
