I took my friend Joshlyn to the barn on Saturday for a little carriage drive and picnic lunch. Joshlyn is quite comfortable around horses so I thought she would be the perfect person to ride in my cart for the first time since my horse, Wendy, likes her!

I cannot even tell you how exciting it is to finally drive my horse with my cart. I dreamt about this for so long! This friendly two-seater makes it so easy for friends to ride with me. This was Wendy’s first time driving in a show harness too. Doesn’t she look adorable? If you’re interested in a driving lesson, you can book one with Shenanigan Stables.

After our drive, we had a little picnic lunch at the farm. I packed up prosciutto sandwiches with aged cheddar, tomato slices, and lemony arugula on Duffy’s Dough sourdough for the occasion. I wrapped the sandwiches in parchment paper and kitchen twine with fresh rosemary tucked in, which I think is a nice touch for a picnic.

I also baked delicious Chocolate Pecan Fudge Cookies, which went ridiculously well with the cabernet sauvignon Joshlyn brought. There’s just something about wine and horses!

We of course had to coo at the new babies at the farm, Simon and Big Mike. Meadow Lane Equestrian Center is extra magical in the spring – Christine New breeds the cutest, sweetest babies!

Happy picnicking,
