Coconut Pistachio Haystacks
(Makes 15 no-bake cookies)
2 cups semi-sweet chocolate chips
1 cup roasted, salted pistachios
1 cup flaked coconut
- Either on the stove or in the microwave, slowly melt chocolate chips so as to not burn the chocolate. Stir every thirty seconds and remove from heat when chocolate chips are almost completely melted. Stir briskly until smooth.
- Stir in pistachios and coconut.
- Drop spoonfuls onto a wax-paper lined cookie sheet. Pop in fridge for about thirty minutes or until set. Delicious cold or at room temperature.
