A beautiful rice dish with pomegranate arils, cranberries, and pistachios
This dish smells like pure heaven when it’s cooking. Oh my word. I’m still thinking about it. It’s easy to make and great for entertaining, because you can cook the rice (I used Jasmine Minute Rice) an hour before the party and let it hang out. Then all you have to do is caramelize some shallots, add spices, and honey, and toss with rice, cranberries, pistachios, and pomegranate arils. Easy!
I served this dish at Disney Dinners: Aladdin alongside Aladdin Chicken and received rave reviews. I tripled the recipe for that dinner party and still had two cups leftover.

I ate this dish cold the next day and was blown away. It would make a great Thanksgiving dish and looks so holiday to me with its red and green flecks. Whether you serve this warm with chicken or cold (even with feta!), this recipe is a keeper.

Jeweled Jasmine Rice
Serves 2
1 cup jasmine rice, uncooked
1 Tbsp butter
1 shallot
2 tsp honey
1/4 tsp paprika
1/4 tsp turmeric
1/4 tsp garlic powder
Saffron sea salt
Dash cinnamon
1/2 cup dried cranberries
Arils from 1/2 pomegranate
1/2 cup pistachios
2 Tbsp fresh dill, chopped
- Cook rice according to package instructions. Cook’s note: I used Minute Rice and boiled 1 cup of water, stirred in 1 cup of rice, and waited five minutes.
- Heat 1 Tbsp butter in a medium pan over medium-low flame. Add chopped shallot and cook for a couple of minutes, until starting to caramelize.
- Add paprika, turmeric, garlic powder, saffron sea salt, and a dash of cinnamon. Stir well, then stir in honey.
- Carefully stir in rice and thoroughly coat with sauce. Stir in dried cranberries and pistachios. Top with pomegranate arils and fresh dill right. Delicious warm, at room temperature, or cold.
