Whipped coffee is all the rage right now but the Greeks have been doing it long before it was trendy. Here’s how to make a Greek Frappe.

A still from a How To video because I forgot to take pictures while I was making it!

Note: if you don’t have a frother, you can shake the first three ingredients in a cocktail shaker until thick and creamy, then transfer to a glass and follow the rest of the recipe.

Greek Frappe

Serves 1
Some water
1 heaping spoonful instant coffee
0-4 heaping spoonfuls granulated sugar (I like 2-3 spoonfuls of sugar in mine)
More water
Ice
Milk (are you enjoying these scientific measurements?)

  1. Fill a tall glass with a bit of water. We’re talking a tablespoon or two. Add a heaping spoonful of Greek instant coffee and 2-3 spoonfuls of sugar. (Or omit the sugar if you don’t like sweet coffee drinks.) Use a frother to froth up the drink. It should reach half the glass in a minute or less. (Moving the frother up and down expedites the process.)
  2. Fill the glass with ice. Top off with a bit more water to reach nearly the top of the glass. If desired (I always desire!), top with a bit of milk. The drink separates to a coffee with foam after a few minutes. This is fine!
