What’s more comforting than warm, gooey chocolate chip bar cookies full of M&Ms? The last time my mom and I were at the lake, she said, “I think you’re going to bake us M&M bar cookies,” so I hopped right up and did just that. They were so good, I just had to share the recipe with you!
This felt very vintage Rose Table to me because we went through a major bar cookie phase when I was young. (And by phrase I mean, oh, my entire childhood.) They’re just so fast and easy compared to individual cookies! Plus the texture is just fabulous.
This is a one-bowl recipe that could not be easier. You don’t even have to let butter soften! This recipe calls for melted butter. I love these warm from the oven when the chocolate is all melty but they stay soft for days. They’re great to pack for picnics and lunchboxes too because of their flat, sturdy shape.

M&M Bar Cookies
2 cups packed brown sugar
1 stick butter (1/2 cup), melted
2 eggs
1.5 tsp vanilla extract
2 cups all-purpose flour
2 tsp baking powder
3/4 tsp salt
3/4 cup chocolate chips
3/4 cup M&Ms
- Preheat oven to 350 degrees Fahrenheit. Grease a 9×13″ pan.
- In a bowl or stand mixer, beat brown sugar and melted butter. Add eggs, beating after each addition. Stir in vanilla. Add flour, baking powder, and salt. Mix well, then stir in chocolate chips and M&Ms. Spread in pan.
- Bake for 20-30 minutes, just until set. Do not overbake! Cool before cutting into large squares.
