Winter Wine Warm Up

Ah, winter at the lake house. How I love thee! By some seasonal phenomenon, the lake is unbelievably blue (and still) in the wintertime. My mom and I spent the first week of the new year out at the lake (it’s her tradition but this year I’m joining) and we had the nicest happy hour on Sunday. The weather was pretty mild, 64 degrees with a breeze from the water, without a cloud in sight. Mom and I both agreed that one of our favorite parts of 2020 was our happy hours at the lake and we vowed to do more of them.

We had leftover cream cheese and bacon from various dishes so I blended those with chopped artichoke hearts, chopped Kalamata olives, and Italian parsley and oregano from my garden. (I’ve gotten in the habit of cutting a bunch of herbs to bring before I come out. I love having them on hand!) I spread the cream cheese mixture in leftover tortillas and sliced them for quick pinwheels. The flavor was phenomenal. Someday I’ll make a bigger batch to write up a proper recipe but man, was that flavor combo good!

I opened an Argami red blend for the occasion.  This medium-bodied wine comes from Spain, so I thought it would be best enjoyed paired with lake views and tapas. It’s quite oaky, smoky, and dry. It really opens up as it breathes and would be pretty easy to pair with dinner, since it isn’t too floral or fruity. It would be perfect with my Fideos or flank steak with chimichurri sauce.

It was a beautiful afternoon at the lake. It’s important now more than ever to take the time to create special moments for yourself, even with leftovers!
