‘Tis the season for holiday entertaining and I’ve got a hot tip for you: sous vide cooking for less stress! When Anova, makers of the #1 sous vide cooker, asked me if I wanted to try their Anova Precision Cooker, I geeked out a bit. I had heard of sous vide cooking for many years but never tried it myself until now. I feel like Jane Jetson cooking with my fancy little Anova Precision Cooker!
What is sous vide cooking? Sous vide is a cooking technique that involves circulating heated water in a pot to cook food to an exact temperature. It’s super precise. The sleek devise can attach to any pot you already have. You submerge food sealed in a bag in the water (I used the Anova Precision Vacuum Sealer) and the device does the rest for you. You can make anything from perfectly cooked steak to salmon to mashed potatoes to notoriously difficult-to-make custard with the click of a button. You don’t even have to get up to control the device. You can control the Anova Precision Cooker from your smartphone!

Why sous vide cooking? The Anova Precision Cooker is perfect for the holidays when you’ve got a million dishes to make and no spare burners or ovens to use. You can use any pot in any room, add the Anova Precision Cooker to it, and voila, you’ve got a whole new world of cooking possibilities. You could even set up the pot in your laundry room if you were so inclined. Any busy hostess will know what a huge help that is. I can’t even count how many times I’ve wanted to serve something at a dinner party but couldn’t because I only have one oven and the side dish I want to make cooks at a different temperature than the main course.
Take Thanksgiving Day for instance. My mom, a fantastic cook, makes mashed potatoes to serve with turkey and gravy. She makes mashed potatoes year-round and they’re fantastic but on Thanksgiving, it never fails that she’s flustered because she’s got a million things on her stove and she isn’t paying attention to the potatoes like she normally does. Enter Anova Precision Cooker. All you have to do is put the ingredients in the vacuumed sealed bag, set it up on your smartphone, and you can forget about it. How crazy is that!? It’s so futuristic and fun. You’ll even get alerts on your smartphone telling you when your food is ready. So fancy! Plus food can hang out in the sous vide bath without overcooking, which helps when you’re trying to get a bunch of dishes on the holiday table at once.

On this particular day, I used my Anova Precision Cooker to make honey glazed carrots to go with Pork Chops and Gnocchi. I added 2 lbs of peeled rainbow carrots to a Anova Precision Vacuum Sealer bag, then added a tablespoon of honey, a pinch of cayenne, 3 Tbsp unsalted butter, some salt and pepper, and fresh thyme before letting the Vacuum Sealer do its magic. I cooked them at 183 degrees for about an hour and twenty minutes and let it hang out in the bath while I finished the rest of the meal. I poured the contents into a small pan to reduce the glaze a bit.
