Allow me to introduce you to Adios Fajitas, a brand new to go fajita concept in my adorable lakeside town of Rockwall, Texas. I knew it was going to be good because the owners also own the Chefs’ Produce Company, which supplies ingredients to some of the best restaurants in the area. (You might remember them from the pandemic, during which they singlehandedly sustained me with their amazing produce boxes.) One bite and you know it’s all made from the best ingredients around.


Adios Fajitas is located near I-30 about twenty minutes east of Dallas and is open Tuesday-Saturday from 11 am – 8 pm for pickup and delivery only, not dine-in. If you want the highest quality fajitas handed to you ready to serve by a cheery staff, keep reading.
Combo Fajitas
The fajitas are meant to be shared. Pictured here is the large, which feeds 2-3 Amigas. Paired with everything else of course, we easily could have fed 4-6! You can choose from chicken, wagyu beef, or Texas Gulf Coast shrimp. The fajitas are served with sour cream, cheese, grilled onions, roasted jalapeños plus super flavorful rice and beans.
I can’t even tell you which I preferred: the chicken or the beef. The chicken was so juicy and had the best smoky mesquite flavor. If you love to order smoked chicken at BBQ places, you will LOVE the chicken. The beef though was so incredibly tender, it’s nearly impossible to choose a favorite protein.
Beef Quesadillas
Boy howdy, this was good. That tender beef is enrobed in cheese (even the cheese at Adios is of the highest quality) served with sour cream, pico de gallo, guacamole, and rice and beans. Super filling for one or easy to share!
Empanadas
Just look at how gorgeously golden these bad boys are! This might have been my parents’ favorite item on the menu. Mom said, I could do the empanadas and shrimp brochette every week! Note: these are quite a bit larger than they look in the photo.
Shrimp Brochette
This is not to be missed! This might have been our favorite thing we tried. Succulent jumbo shrimp is wrapped in bacon and served with a delicious foamy garlic wine butter sauce. (Are you drooling yet!?) They’re smoky morsels of goodness and you must try them.
Queso
I’m the biggest queso girlie but I’m also really picky about queso and let me tell you: the queso at Adios Fajitas gets a 10/10. It’s the perfect thick – but not too thick – consistency with just the right amount of heat.
Guacamole
Chunky, healthy, fresh. Need I say more? Perfect with the salty housemade chips and delicious with the fajitas.
Key Lime Pie
If you want something light and sweet after all that, try the key lime pie! The buttery crust pairs perfectly with the tangy filling and the texture is just right.
Churros
How did Adios Fajitas know that I was craving churros!? These churros are light as air, super cinnamony, and served with an amazing dulche de leche sauce.
Watermelon Margaritas
I am not a big margarita fan but holy cow, Adios Fajitas knows how to make margaritas! And how fun to pick up a whole freakin’ jug of margaritas to go with your fajita dinner.
