Frosted Brownies

Frosted Brownies

Looking for THE BEST Frosted Brownies? You found them. I swear, I heard trumpets playing while eating this perfect little treat. I don’t want to oversell these, but this is pretty much the best brownie I’ve ever eaten.

If you love a deep, dark, rich brownie, you will love this recipe. And if you love a good cream cheese frosting, you might just swoon.

Frosted Brownies

This recipe only makes an 8″ pan but trust me, they’re very rich. These stay fresh all week long, making them perfect for lunchboxes!

Frosted Brownies

½ cup unsalted butter, cut into cubes
3 oz unsweetened chocolate, chopped
½ cup granulated sugar
½ cup dark brown sugar
2 large eggs
1/2 tsp vanilla extract
¾ cup all-purpose flour
1 tsp baking powder
¼ tsp salt
Cream Cheese Frosting, recipe follows

  1. Preheat oven to 350 degrees Fahrenheit. Line an 8” square pan and spray with nonstick spray.
  2. Combine chopped chocolate and cubed butter in a microwave-safe bowl. Microwave at 50% power until melted, about 2 minutes, stopping to stir every 30 seconds or so.
  3. Remove from microwave and whisk in granulated sugar and dark brown sugar. Whisk in eggs and vanilla. Fold in dry ingredients just until combined, then spread into prepared pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely, then frost with cream cheese frosting.

Cream Cheese Frosting

4 oz cream cheese, softened (full fat!)
3 Tbsp unsalted butter, softened
1 ¾ cups powdered sugar
½ tsp vanilla extract

  1. Combine cream cheese and butter until smooth. Slowly mix in powdered sugar. Mix in vanilla extract.

  1. Normally, I’m a sucker for the crackly top on brownies. I’m tempted to make these into brownie sandwiches (and cut them smaller) to preserve the top on half of them.

I haven’t tried that but please report back if you do! The brownies are fudgy and amazing on their own so I’m sure it would be great. 🙂
