Tomato Cucumber Pesto Salad

I don’t know about you but I’m always looking for easy no-cook side dishes to make all summer long. This Tomato Cucumber Pesto Salad is the perfect accompaniment to anything off the grill!

If you’ve never tried my homemade pesto before, you’re in for a treat. It’s so perfect that it even freezes perfectly, capturing the flavor of summer all year long. And yes, you can of course use store bought pesto in a pinch.

This dish only takes minutes to make and tastes so fancy. Make it for your next summer BBQ! Note: I used mini mozzarella pearls here but you can of course just cut mozzarella!

Tomato Cucumber Pesto Salad

1 English cucumber, sliced
1.5 cups cherry tomatoes, halved
4 oz mozzarella, cut into small pieces
1 Tbsp pine nuts 

3 Tbsp homemade pesto

1. Toss cucumber, tomatoes, mozzarella, and pine nuts with homemade pesto. Serve immediately.
