Strawberry Cheesecake Jars

I just love these adorable Strawberry Cheesecake Jars! These little no-bake cheesecakes are perfect to make when strawberries at nice and juicy.

This recipe doesn’t doesn’t require the oven, making this no-bake dessert perfect for summertime. These cheesecake jars are also fantastic for a picnic, since the jars will stay chilled for hours.

Strawberry Cheesecake Jars

For a variation, try adding some fresh mint to the strawberries while they’re macerating or, if you prefer, add a bit of lemon zest to the top of the jars.

Strawberry Cheesecake Jars

For the crust:
1 cup graham cracker crumbs
6 Tbsp butter, melted

For the cheesecake filling:
1 cup heavy whipping cream
8 oz cream cheese, at room temperature

1 tsp vanilla extract
1/4 cup granulated sugar

For the topping:
1 pint strawberries, washed and dried
2 Tbsp granulated sugar

  1. Quarter strawberries and toss with sugar. Set aside.
  2. Mix graham cracker crumbs and melted butter together. Spoon into the bottom of six mason jars.
  3. Whip heavy whipping cream in a chilled bowl until stiff peaks form.
  4. In a separate bowl, beat cream cheese until smooth. (Make sure cream cheese is completely softened before you start. Cold cream cheese does not incorporate correctly.) Mix in sugar and vanilla extract.
  5. Gently fold whipped cream into cream cheese mixture until uniform in color.
  6. Divide cheesecake mixture amongst the six jars. Spoon macerated strawberries right on top. Chill for at least two hours or overnight.
