Looking for an elegant summer salad that’s quick and easy to make? You’ve come to the right place! I whipped this up at the lake house last night, inspired by a dish I ate recently at North Havens Gardens, and couldn’t wait to share it with you.


Here arugula is tossed with fresh lemon juice and olive oil and topped with juicy watermelon, salty feta cheese, lemon zest, and fresh mint from my garden. Such a lovely summer combination!

I rarely measure when it comes to salad but for reference, I used less than a full box of arugula, one lemon, probably 2 oz of feta, and two sprigs of fresh mint.
This is the perfect salad to make if you grow watermelon and mint in the garden, or when you can find excellent melons at the store. And if you’ve never had salt on watermelon, you’re in for a treat!

Zesty Watermelon Arugula Salad
Arugula
Lemon, olive oil
Watermelon
Feta cheese
Fresh mint
- Arrange arugula in a serving bowl. Zest a lemon and reserve, then squeeze fresh lemon juice all over the greens. Drizzle with olive oil and massage the greens.
- Top arugula with watermelon chunks, a generous amount of feta cheese, fresh mint, and the reserved lemon zest. Season salad with black pepper and Hawaiian or black sea salt.
