Zucchini Mozzarella Stacks

Looking for a delicious way to use up all that summer zucchini in the garden? Make Zucchini Mozzarella Stacks! Here fried zucchini slices are layered with warm marinara sauce, mozzarella slices, and fresh basil. So simple, so perfect!

I didn’t include measurements here because you can easily make as much or as little as you want. Two zucchini should make 4-6 stacks. For every two zucchini, you’ll need about 1/3 cup flour, 1/2 cup Panko, 6 slices of mozzarella, and about 1/3 cup of marinara sauce.

This would be a delightful summer appetizer for company! It would also be wonderful with rice, couscous, or pasta as an entree.

Zucchini Mozzarella Stacks

Zucchini
Flour, salt, pepper, oregano
Beaten egg
Panko breadcrumbs
Mozzarella slices
Marinara sauce
Parmesan cheese

Fresh basil

  1. Warm your favorite marinara sauce over a low flame.
  2. Slice zucchini into fairly thick slices and dredge in all-purpose flour whisked with salt, pepper, and dried oregano, then eaten egg, then Panko breadcrumbs.
  3. Fry zucchini in vegetable oil over medium heat until golden, flipping once. Drain on paper towels.
  4. Layer fried zucchini slices with marinara sauce, sliced mozzarella (cut into smaller pieces), fresh basil, and grated parmesan cheese.
