If you love sausage, cheese, and potatoes, you’ll love this simple German soup. It has tons of flavor thanks to the smoked sausage, paprika, browned onions, garlic, and crushed red pepper.


The exact cooking time will depend on how big your potato cubes are but this soup took me about thirty minutes. That’s it!


This is richer than a broth soup such as chicken noodle but lighter than, say, mushroom cream soup. It’s somewhere in between and it’s absolutely delicious!

Cozy Potato Sausage Soup
2 Tbsp olive oil
1 yellow onion, diced
4 garlic cloves
1/2 tsp paprika
1/2 tsp dried oregano
Dash crushed red pepper
12 oz smoked sausage, sliced
1.5 pounds baby gold potatoes, cubed
4 cups chicken stock
3/4 tsp salt
1/2 tsp black pepper
1 cup milk
1/2 cup heavy cream
2 oz cheddar cheese, grated (1/4 cup)
Fresh chives
- Heat olive oil in a Dutch oven. Add diced onion and cook until soft, about five minutes. Add garlic and cook another minute or two until it starts to brown. Season with salt and pepper. Stir in paprika, dried oregano, and crushed red pepper.
- Add sliced sausage and cook until browned on both sides, about 5-8 minutes.
- Add potatoes, chicken stock, salt, and pepper. Bring to a boil then reduce to a simmer. Cover and cook until potatoes are tender, about 15 minutes. Stir in milk, cream, cheddar cheese, and chives and heat through.
