It’s apple season, baby! I’ve got a delicious salad recipe for you today that celebrates fall flavors with thinly sliced apples, pomegranate seeds, and a delicious apple cider vinaigrette.
UPDATE: I’m so delighted at how many of you tag me in Thanksgiving photos last year because you made this salad! It’s perfect for Thanksgiving but don’t discount it for Halloween either. I served this as the first course at Disney Dinners: Hocus Pocus and it definitely put a spell on my guests.
I layer the whole salad on a platter. It’s so easy to make! The dressing takes just five minutes to whisk together and easily serves six.
I love food like this so much: it’s easy, fresh, impressive; it’s quick but fancy. I will be making this all fall. It would also make a lovely Thanksgiving side dish. I hope you love this recipe as much as I do!

Salad greens
1 apple (I love Honeycrisp and Gala)
Feta cheese (goat cheese crumbles or bleu cheese would be great too!)
Pomegranate seeds
Pecans, toasted
Apple cider vinaigrette, recipe follows
- Cut an apple in half, then thinly slice, removing any hard core from slices.
- Arrange salad greens on a platter (or build directly on plates or in a salad bowl). Fan out thinly sliced apple. Crumble feta cheese on top. Sprinkle pomegranate seeds and toasted pecans over salad. Serve with apple cider vinaigrette.
Apple Cider Vinaigrette
1/3 cup extra virgin olive oil
1/4 cup apple cider vinegar
1 Tbsp honey
1/2 tsp Dijon mustard
Salt, pepper to taste
- Pour olive oil in a jar. Slowly stream apple cider vinegar into olive oil, using an electric salad whisk to emulsify the dressing. Whisk in honey, Dijon, and salt and pepper to taste.
