Pears are so underrated in the fall/winter! I absolutely love a perfectly ripe pear. Here sliced pear is paired with spinach, feta cheese, pomegranate arils, toasted pecans, and a quick and easy apple cider vinaigrette comes together for one elegant Pear Pomegranate Salad.

I used feta cheese here but goat cheese would be phenomenal. Feel free to swap out walnuts for pecans if you prefer! The delicious dressing takes just minutes to whisk together and easily serves 4-6 people.


I like to layer the whole salad on a platter but feel free to make individual servings or toss it all in a salad bowl.


Pear Pomegranate Salad
Spinach
Bartlett Pear
Feta cheese
Pomegranate arils
Pecans, toasted
Apple cider vinaigrette, recipe follows
- Cut a pear in half and thinly slice.
- Arrange spinach on a platter (or build directly on plates or in a salad bowl). Fan out thinly sliced pear. Crumble feta cheese on top. Sprinkle pomegranate arils and toasted pecans over salad. Serve with apple cider vinaigrette.
Apple Cider Vinaigrette
1/3 cup extra virgin olive oil
1/4 cup apple cider vinegar
1 Tbsp honey
1/2 tsp Dijon mustard
Salt, pepper to taste
- Pour olive oil in a jar. Slowly stream apple cider vinegar into olive oil, using an electric salad whisk to emulsify the dressing. Whisk in honey, Dijon, and salt and pepper to taste.
