If I had to recommend one single plant in my garden, it would be rosemary. I’m obsessed. This easy herb functions not only as a hardy, gorgeous plant but also shows up in practically every recipe here at The Rose Table! What’s not to love?
Why Grow Rosemary?
Rosemary is not just a delicious herb to use in the kitchen: it’s also a gorgeous edible evergreen shrub. It’s a perennial herb, meaning you plant it once and you’ll be able to harvest rosemary forever.

Where to Grow Rosemary
Like most herbs, rosemary wants at least six hours of full sun, good soil, and good drainage. It can tolerate some shade but prefers full sun. Mine is in my herb garden, which I actually regret. It’s behind my dog in the picture below and you can see how enormous it’s gotten! It’s basically a shrub at this point.

How to Grow Rosemary
Rosemary is so easy to grow. I do virtually nothing to mine, except to cut it back when she gets too big. Water weekly and plant in good soil and you’ll be good to go.
How Hardy is Rosemary?
Rosemary is extremely hardy in zones 8-11! This easy herb is drought tolerant, making it an excellent choice for southern gardeners like myself. I’ve had this plant for ten years now and it even survived snowpocalypse (though it looked awfully touch and go there for a couple of months!). Here it is after multiple freezes this month:

While rosemary can survive freezing temperatures, it’s unlikely to survive in temperatures lower than 10 degrees. If you want to grow rosemary in a very cold climate, keep it in a pot and bring it indoors on a sunny windowsill for the winter.
How to Use Rosemary
There’s a reason why so many Rose Table recipes involve rosemary: it’s delicious and it’s evergreen, meaning I have an abundance of it all year long. Use it in chicken dishes, on potatoes, and even as a garnish!
