Raspberry Mimosas

Looking for a vibrant pink drink for Valentine’s Day? You found it! These raspberry mimosas are as delicious as they are beautiful.

I served this easy cocktail at my Galentine’s Brunch and it was a hit! This recipe makes one small jar of syrup, which makes 12-16 mimosas. This recipe also easily doubles!

Don’t let the simple syrup deter you. It only takes a few minutes to make and will up your drink game! Have leftover syrup? It’s delicious stirred into iced tea!

Could this be any prettier? Even the foam turns pink for a truly girly brunch cocktail. Pictured on the left below is one tablespoon and pictured on the right is two tablespoons. Both versions are delectable!

Raspberry Mimosas

1 cup raspberries, washed and dried
1/2 cup water
1/2 cup sugar

Champagne

  1. Boil raspberries with 1 cup water.
  2. Reduce heat. Add sugar and cook for 2-3 minutes.
  3. Let cool. Strain solids from liquid, then discard the solids and chill the liquid for at least one hour.
  4. Add 1-2 Tbsp of raspberry syrup to champagne glasses. Fill with champagne and serve immediately.
