If you’ve never had my old-fashioned buttermilk pancakes, you’re in for a treat. They’re cute as can be when dressed up as Mini Chocolate Chip Pancakes, the perfect way to serve pancakes to a crowd!


I served these cuties at my Galentine’s Brunch and they stole the show. I love them served with whipped cream, raspberries, and maple syrup.

This makes about a dozen mini pancakes, but feel free to make these even smaller if you want teeny pancakes!


Mini Chocolate Chip Pancakes
Makes 12 mini pancakes
1 egg
1 cup buttermilk
2 Tbsp shortening, melted
1 cup all-purpose flour
1 Tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips
- Beat egg.
- Add remaining ingredients in order listed, beating with a wire whisk after each addition.
- Butter heated griddle or electric skillet.
- Use a large spoon to measure batter evenly onto hot skillet. Quickly sprinkle chocolate chips evenly over pancakes.
- Turn with spatula when bubbles appear. Cook for another minute or two until the underneath is golden.
