There’s just nothing I love more than roasted chicken. It’s the perfect Sunday supper! This cozy recipe is a slight variation on my original Roasted Chicken blended with my Herb Roasted Turkey method. Here shallots, garlic cloves, and petite potatoes are roasted in chicken juices with a butter, rosemary, and thyme roasted bird.


I love a whole chicken. It’s so much cheaper, you get the wonderful skin-on, bone-in benefit and you can even make chicken stock with the leftovers!

I wanted a super rustic-looking version of my favorite roasted chicken for my Sleepy Hollow dinner party and I love how the rosemary and butter did just that.


Your house will smell absolutely incredible with this delicious dish in the oven. All you need is a little side salad and you’ve got yourself dinner with about five, MAYBE ten minutes of prep.


Herb Roasted Chicken
1 whole chicken
2 pounds petite potato medley
4 shallots, peeled and sliced in half
4 garlic cloves, peeled
1 small lemon, cut in half
Fresh sage, rosemary, and thyme
4 Tbsp butter, softened
1 Tbsp fresh rosemary and thyme
Additional herbs and lemon slices for garnish
- Preheat oven to 425 degrees Fahrenheit.
- Slice any potatoes that are larger than the rest. Arrange potatoes, shallots, and garlic cloves in the bottom of a 9×13” pan. Gently toss with a bit of olive oil.
- Fill the chicken with lemon halves, sage, rosemary, and thyme.
- Pat chicken dry with paper towel. Generously season the outside of the chicken with salt and pepper. Mix together softened butter and chopped rosemary and thyme. Smother herb butter all over chicken. Season generously with more sea salt and black pepper.
- Tie the legs together with kitchen twine, then use another piece of twine around the body to keep the wings against the chicken.
- Roast for 1 1/2 hours or until the breast reaches 165 degrees. Remove from the oven and let rest for 20-30 minutes before carving. Spoon juices on top of chicken pieces. Garnish with lemon wedges and more herbs.
