Looking for a sweet little 8″ apple cake to serve all fall? You found it! This Rustic Apple Cake is perfect with a scoop or vanilla ice cream or cinnamon whipped cream.


This simple, buttery cake should be a staple in the fall. It’s so satisfying to make and it’s nice to have cake options that aren’t a giant multi-tiered layer cake.

I came up with this old-fashioned recipe for my Sleepy Hollow party because I wanted a cake they might have served at the Van Tassel autumn harvest party. This definitely fits the bill!


Rustic Apple Cake
1 cup granulated sugar
1 stick unsalted butter, at room temperature
3 large eggs, at room temperature
1 tsp vanilla extract
1/2 tsp cinnamon
3/4 tsp baking powder
1/2 tsp salt
1 cup flour
1 cup peeled, chopped apple
Serving suggestion: vanilla ice cream or whipped cream
- Preheat oven to 350 degrees. Thoroughly grease and flour the bottom and sides of an 8″ cake pan.
- In a medium bowl, beat butter with 1 cup of sugar until combined, then beat in eggs one at at time. Stir in vanilla and cinnamon, then sprinkle flour, baking powder, and salt and mix just until combined. Fold in chopped apple.
- Spread cake batter evenly in prepared pan, then bake in preheated oven for 30-35 minutes. Let cool for twenty minutes, then run a knife around the edges and remove from pan. Cool completely and dust with a bit of powdered sugar. Serve with vanilla ice cream or whipped cream.
