Bacon and Pea Pasta Salad

Looking for an easy way to serve peas? Make this delicious Bacon and Pea Pasta Salad! This is way better than you’re expecting it to be. There’s just something about bacon, lemon, and feta that’s a perfect combination.

This would be fabulous with fresh spring peas but I used frozen peas for this recipe. You could really use anywhere from 1-2 cups of peas. You don’t even have to cook them separately; just add them to the pasta water for the last minute of cooking!

Green onion is the perfectly flavor complement here and the lemon zest adds so much! I made this for a spring garden lunch and we all had two or three servings. I hope you love it as much as my friends did!

Bacon and Pea Pasta Salad

1 box shell pasta
1.5 cups frozen peas
6 oz feta cheese 
6 slices of thick-cut bacon
1 Tbsp fresh parsley, chopped
2-4 green onions, sliced 
Lemon dressing
, recipe follows

  1. Cook pasta according to package directions. Add frozen peas to boiling water for the last minute of cook time. Drain water from pasta and peas and let cool slightly. Move to a large serving dish.
  2. Make the lemon dressing and pour a teeny bit over the pasta and peas to coat. Pop in the fridge to chill for 20-30 minutes.
  3. Meanwhile, cut bacon into small pieces and cook until crispy. Let drain on a paper towel.
  4. Add feta cheese, crispy bacon, parsley, and green onions to pasta salad. Toss with remaining dressing. Serve immediately or refrigerate until ready to serve.

Lemon Dressing

Zest from one large or two small lemons
1/4 cup lemon juice (one large or two small lemons)
1/4 extra virgin olive oil
Salt, pepper

  1. Zest and juice lemons. Slowly whisk in olive oil. Season to taste with salt and pepper.
