I can’t seem to stop making date candy! It’s so fun to make and I love that it’s a healthier alternative without sacrificing any flavor. If you’ve never tried date candy, you’re in for a treat. Dates have a caramel-like flavor and tons of natural sweetness and are positively decadent with a little peanut butter, chocolate, coconut, and sea salt.






Coconut and chocolate is such an underrated flavor combination. Add some almonds and you’ve got yourself a homemade almond joy!




Dates are high in fiber and antioxidants and give you a ton of energy. Paired with protein-packed peanut butter and a bit of pure dark chocolate, this is a nutrient-dense little chocolate treat.


Coconut Almond Date Candy
12 Medjool dates
1/4 cup peanut butter
2 Tbsp almonds, plus more for garnish
1 Tbsp shredded coconut, plus more for garnish
4 oz semi-sweet baking chocolate
2 tsp vegetable shortening
Hawaiian sea salt
- Chop almonds and coconut. Mix together with peanut butter.
- Slice dates in open and remove pit. Stuff with coconut almond mixture.
- Finely chop chocolate and place in a heatproof bowl with vegetable shortening. Microwave at half power for 1-2 minutes, stirring every thirty seconds until smooth and glossy.
- Spoon chocolate over dates one at a time. Shake off the excess and set finished treats open-side down on a baking sheet lined with wax paper.
- Sprinkle chocolate-covered dates with chopped almonds and Hawaiian sea salt. Let sit at room temperature for one hour to firm up, then enjoy! Store in an air-tight container at room temperature.
