I’m officially in love with Untamed Wine Estates. I cannot believe it’s taken me this long to visit! Located on the famous Texas Wine Trail on Hwy 290 in Johnson City, Texas, Untamed Wine Estates has beautiful gardens, monarchs fluttering about, exquisite wine, and the best pizza I’ve ever had. Let’s talk about it!

The Food

Even if you don’t drink wine, Untamed is worth a visit. The food menu is substantial, making it an excellent place for lunch on the trail. We split the burrata to start, which is served with toast points and had tomatoes, pesto, and basil oil. Burrata is simply never a bad idea.

We also split the white truffle pizza, which is the best pizza I’ve ever had. The is a niche reference but the cheese pull made me think of A Goofy Movie. It’s so garlicky and truffle-y. It’s an absolute dream!

The Wine

I opted for the Rosé and Their Reds flight, which included the Cabernet Franc Rosé, Cabernet Sauvignon Rosé, Cabernet Franc, and Cabernet Sauvignon. I rarely say this but I didn’t try a single wine that I didn’t love!

The Cabernet Franc Rosé and Cabernet Franc both came home with me. The latter was quite a splurge so I’m thinking it will be my Christmas wine this year! I always open a special bottle to celebrate the holiday.

The Atmosphere

I loved the relaxed atmosphere at Untamed. The indoor space was industrial but cozy and quite spacious. The outdoor patio was completely shaded at noon. We spent an hour and half at Untamed and not a soul was rushing us out the door. I truly could have spent the whole afternoon enjoying the view of rolling views.

Final Thoughts

If you’re looking for an exceptional food and wine experience on the Texas Wine Trail, you’ve got to stop by Untamed. I can’t imagine a visit to Fredericksburg without a visit to Untamed now!
