Homemade Raspberry Almond Popsicles | The Rose Table

 

This recipe just screams summer. This was my very first time making homemade popsicles after commandeering my mom’s popsicle mold. (Sorry, Mom.) What a fun treat!The almond extract complements the raspberry flavor rather than overpowers it for just a hint of almond. These are crazy healthy and delightfully tart. If you’re not a fan of tart treats, add an extra tablespoon of honey.

Homemade Raspberry Almond Popsicles
Makes four pops.
1 cup plain yogurt
1 cup fresh raspberries
2 Tbsp honey
1/8 tsp almond extract 

1) Smash raspberries. Combine with other ingredients.

2) Pour into popsicle mold. (You can also use paper or plastic disposable cups and popsicle sticks.)

3) Freeze 8 hours.

4) Run hot water over plastic case (or cup) for 30-60 seconds until popsicle slides out. Enjoy!

This holds six but the recipe only made four.

They pop right out of the holder.

You can hardly see the plastic shell but it’s there.

That Williams-Sonoma hand lotion is amazing.

A few seconds under hot water and I was able to slide the casting straight off. (Which, in hindsight, I should have taken a video of.)
