A delightful pomegranate champagne cocktail
This is such a drinkable cocktail! I came up with this for Disney Dinners: Aladdin and was so pleased my guests’ reaction. It’s such a pretty drink with pomegranate arils bouncing around from the champagne bubbles and it’s actually fairly good for you! Pomegranate juice, lime juice, and ginger are all great for your body and champagne is great for the soul. (In my opinion anyway!)

This would make a marvelous holiday cocktail. Make the ginger simple syrup ahead of time. It will be good in the fridge for weeks. If you’ve never bought fresh ginger, don’t be afraid. Get the scary knobs at the grocery store, use the edge of a spoon to peel it, and slice it into pieces. Toss in simple syrup and let steep for thirty minutes. Keep it in a jar all holiday season!

A Whole New World Champagne Cocktail
0.25 oz freshly squeezed lime juice
0.5 oz ginger simple syrup, recipe follows
1.25 oz pomegranate juice
2 oz champagne (I used Korbel)
Pomegranate arils
- Mix first three ingredients together in a champagne glass.
- Top with champagne. Float arils on top.
Ginger simple syrup:
1 cup sugar
1 cup water
2” ginger knob
- Peel ginger with back of spoon. Slice into thin rounds.
- Heat sugar and water in a small sauce pan until sugar has dissolved. Add ginger, bring to simmer. When water is simmering, remove from heat and let sit thirty minutes. Strain ginger and keep in a jar in the fridge for up to a month.
