I served four easy mini sandwiches as a tea sandwich flight at Disney Dinners: Mary Poppins Returns as a nod to all the flying in the film. I’ve always wanted to do a tea sandwich flight after experiencing one at the Fairmont Chateau Lake Louise high tea. (Read about it here.) Since Mary Poppins is British and the movies are set in London, it seemed like the perfect opportunity to not only serve a tea sandwich flight but also put a whimsical spin on it.

There are scores of sandwiches you could serve in this fashion. Start with the lightest flavor on the left and end with the most overpowering flavor on the right. I went with a cucumber sandwich cut out like an umbrella, a shrimp salad sandwich cut out like a balloon, a chicken salad sandwich in a mini croissant, and my homemade lox (it’s so easy!) with cream cheese cut out like a kite. Then I piped a little SOMETHING on the plate to look like a kite string. It gives it that little Disney touch, don’t you think?
The concept is simple and the possibilities are endless. I made the chicken salad the night before, the shrimp salad that morning, and then just had to assemble the last two before my guests arrived. I hope you’re as enchanted by this flight as my friends were!
Tea Sandwich Flight
1 English cucumber
1 cup ricotta cheese
2 Tbsp Basil
2 Tbsp Italian parsley
Salt, pepper to taste
1 cup cooked shrimp
3 Tbsp Greek yogurt
1 tsp lemon juice
1 tsp lemon zest
1 tsp chopped chives
1 tsp chopped Italian parsley
1 tsp finely chopped celery
Chicken Salad (recipe here)
Slivered almonds, chives for garnish
Gravlax (recipe here)
- To make the cucumber sandwiches: Combine ricotta, zest from one lemon, herbs, salt, and pepper. Thinly slice cucumber at an angle. Spread ricotta mixture on two sides of white bread. Sandwich cucumber slices between. Cut in desired shape.
- To make the shrimp salad sandwiches: Combine shrimp, yogurt, lemon juice, lemon zest, chives, parsley, and celery. Spoon onto a piece of Bibb lettuce on bread. Cut into desired shape.
- To make the chicken salad sandwiches: Prepare chicken salad the day before. Spoon into sliced mini croissants. Top with a sprinkling of chives and slivered almonds.
- To make the gravlax sandwiches: Make homemade gravlax. Spread bread with cream cheese. Top with gravlax and fresh dill. Cut into desired shape.
