I served this dish as the first course at Disney Dinners: Haunted Mansion topped with Ghost Hand Pies. If you’re not adding buttery, cheesy hand pies on top, feel free to throw in bread crumbs or a nice goat cheese.
Spinach and Blackberry Salad
6 cups baby spinach
2 pints blackberries
2 plums, cut into eight pieces
1/4 cup pumpkin seeds
Balsamic vinaigrette
- Toss all ingredients together. Voila!
