Big news, Rosies! I WROTE A COOKBOOK! It has been so incredibly difficult keeping this secret from you. For years I’ve been so touched by how many of you have messaged me asking if I have a cookbook available. I’m pretty sure I’ve read every single email to my mom because they all make my day! I have loved cookbooks since I was a little girl. I have an enormous collection of cookbooks and I love spending lazy Sundays flipping through a stack of cookbooks, getting inspired for the week to come. I cannot even believe that I get to have my very own!

The Rose Table Cookbook

This cookbook is a collection of seventy of my favorite recipes. We’re talking the recipes that I really make in my personal life all the time. My can’t-live-without-them recipes. My ride or die recipes, if you will. There are five chapters in the cookbook: Breakfast & Breads, Appetizers, Salads & Soups, Main Courses, and Desserts. (Shoutout to my dear friend Courtney for helping me figure out how to organize the recipes!)

I suppose it was hard to go through hundreds of my recipes and decide which to include in the cookbook but it also wasn’t. These are the recipes I serve to my friends all the time because they turn out perfectly every time. If you want a cookbook full of recipes that you can count on for every day and entertaining, this is the cookbook for you.

There’s also one brand new recipe with a fun story: Blueberry Hill Surprise. It’s named after my parents’ lake house, affectionately named Blueberry Hill since it’s a round, blue house on top of a hill. There is a blueberry farm near the lake house and I love going every summer and picking a bucket full of blueberries. When I was a teenager, I wanted to bake a dessert that would use a fair amount of the blueberries I’d picked that morning. A pie! Perfect! The only problem is…I don’t really love pie because I don’t like pie crust.

The “Surprise” is that it looks like blueberry pie but the crust tastes like a sugar cookie. It’s a rather magical recipe. You mix up the dough, spread half of it in the bottom and up the sides of a pie plate, fill it with blueberries, flour, sugar, and a bit of cinnamon, then spread more dough on top. The result is the most magical blueberry pie you’ve ever had. And the weirdest part is how good the pie is cold from the fridge. The crust tastes the most like a cookie to me then. This is quite literally one of the best desserts I’ve ever baked.

My friends and family have asked me many, many times when I was going to post this recipe on therosetable.com but because this was one of the first recipes I ever truly created, it was too special for me to just post like every other recipe. So I decided to hold on to it until maybe, just maybe, my dream of publishing a cookbook came true. And here we are! The pie even made the cover of the cookbook.

My mom and I shot the cover at my parents’ lake house in beautiful east Texas. (God bless the team at HP for letting me do that!) In the cover photo, I am sporting my cheesy laughing-so-hard-my-eyes-are-closed grin. A few of my friends protested this as the cover shot. “But we can’t see your eyes!” they said. But I decided this particular moment in time captures exactly why I started therosetable.com seven years ago: this is my laughing smile, my friends-only smile, my most relaxed and happy self smile. I was having an extremely stressful day and week when this photo was taken but the minute I sat down in front of this delicious pie with fresh flowers on the table and good wine in my glass, all of my troubles melted away and that is what The Rose Table is all about.
