Looking for a thirty minute soup that will make you feel all warm and cozy? You’ve come to the right place! Orzo Sausage Soup is a one-pot dinner that could not be easier to make. It’s the kind of dinner you could easily make for company while drinking wine, for instance. It’s that simple!
You basically brown onion, garlic, and sausage then stir in chicken broth, seasonings, and a huge can of crushed tomatoes. Bring it to a boil then add orzo. Cover and cook simmer for about eight minutes and voila, you’ve made dinner in the amount of time it takes to watch an episode of Friends. Stir some half an half and fresh parsley and serve with parmesan and crusty bread. Easy peasy!

Orzo Sausage Soup
2 Tbsp olive oil
1 medium onion, chopped
4 garlic cloves, minced
1 pound Italian sausage
4 cups chicken broth
28 oz can crushed tomatoes
1 tsp salt
Pepper to tase
1 tsp dried oregano
1 1/4 cups orzo
1/3 cup half and half
2 Tbsp fresh Italian parsley
Parmesan for serving
- In a dutch oven, sauté chopped onion in olive oil over medium low heat until softened and slightly browned. Add garlic cloves and cook for about two minutes. Remove sausage from casing and add it to the pan. Turn up the heat to medium and cook for 5-10 minutes until sausage is browned on all sides.
- Add the chicken broth to deglaze the pan, scraping the bottom of the pan to free any sausage bits. Add tomatoes, salt, pepper, and oregano.
- Bring the soup to a boil and add orzo. Cover the soup and let simmer with the lid on for 6-8 minutes or until orzo is fully cooked.
- Stir in half and half and chopped Italian (flat-leaf) parsley. Serve with parmesan and crusty bread.
