I don’t know about you but I could use some of that famous Irish luck this St. Patrick’s Day! This delicious hot fudge sundae is the perfect dessert to capture the gold at the end of the rainbow.
This mint chocolate chip sundae has a rainbow, fluffy clouds, and gold chocolate coins as the “pot of gold.” Little leprechauns will love this adorable sundae! Hell, I made it for myself and burst into the biggest grin when I finished it. It’s impossible to be in a bad mood eating this.

Pro tip: to get the rainbow belt to stay up like this, I put a twist tie/bread tie under it, then removed before digging in.
Luck of the Irish Sundae
4 scoops mint chocolate chip ice cream
Homemade hot fudge sauce
Whipped cream (recipe follows)
Gold chocolate coins
1 sour rainbow belt
- Make whipped cream and set aside.
- Spoon mint chocolate chip ice cream in a serving dish, then spoon hot fudge sauce on top.
- Tuck gold coins on one side, then spoon whipped cream in two piles on either side of the sundae. Lay a rainbow belt over a twist tie or bread tie if you want to prop it up, then set in the whipped cream “clouds.” Don’t forget to remove the twist tie before digging in!
To make homemade whipped cream, beat 1/2 cup of heavy whipping cream in a metal bowl with a metal whisk until soft peaks form. Whisk in 2 Tbsp powdered sugar and 1/2 tsp vanilla extract. Don’t overbeat it – you want pillow whipped cream for your clouds!
