This was hands down the best Sunday Funday I’ve had in months. It was a gorgeous day – 77 degrees Fahrenheit and sunny in Dallas – and I packed up my last bottle of Folktale Winery sparkling rosé that I’ve been saving for a special occasion. After all, my year of champagne and horses was off to a bit of rocky start and I thought a beautiful day with my beautiful horse was occasion enough. Plus, my friend Kat is quite wine enthusiast so I knew she’d appreciate it.
This is an incredibly refreshing, light wine. Perfect for a warm spring day or even to sip in the pool! It’s so light and bubbly, it honestly tastes like punch. You can read my blog post about Folktale Winery here.
I styled a cheese plate with a salami rose as the centerpiece. I set port salut (one of my favorite cheeses!), garlic and herb Boursin cheese, and aged Irish cheddar around the rose, then filled in with strawberries, raspberries, grapes, apple slices, pistachios, crackers, and fresh herbs from my garden. So easy! I covered the whole plate with saran wrap and headed to the barn. Don’t worry – I reserved some apple slices for Wendy!

For dessert, I served my Chocolate Lavender Cupcakes. They’re a dreamy way to end any meal! I made them ONE WEEK AGO and they still taste absolutely perfect.
There’s truly nothing that makes me happier than enjoying wine with Wendy!
