Yesterday was a very hot day. I wanted to stretch my legs during work so I did a lap around the garden and I got so very warm and thought a popsicle sounded just perfect. Sadly all of my store bought popsicles had freezer burn so I decided to make some of my own!
You really want freshly squeezed orange juice for this recipe, about six oranges. If you use store bought orange juice, make sure it’s pure orange juice with no sugar added and no pulp. A bit of acidity from the lemon juice and a tiny bit of sweetness from the sugar balance it out but the vanilla extract is really what makes it sing. I hope you love these happy popsicles as much as I do!
Orange Popsicles
Makes 6 popsicles
2 cups freshly squeezed orange juice
2 tsp lemon juice
2 Tbsp granulated sugar
1 tsp vanilla extract
- Whisk all ingredients together until sugar has dissolved.
- Pour into popsicle molds and freeze for at least four hours or overnight.
- To unmold, dunk popsicles in a glass full of warm water for about 20-30 seconds. Pull the case off an enjoy!
