I picked up gorgeous artichokes and saffron Kalamata olives from Amanida at the farmers market the other day and decided to make a simple pasta salad that would showcase them. I used gorgeous rainbow pasta for this pasta salad, but of course you could use regular benne or bow tie pasta as well!

The measurements here are really guidelines. Want to use a whole freaking cup of feta cheese? Zero judgement here! Want to make an Olive palooza? Go nuts! Have oregano instead of basil? Delicious! Want to make it heartier? Add my Perfect Grilled Chicken.

For my farm-to-table garden lunch (which I’ll tell you about tomorrow!), I garnished this pasta salad with squash blossoms from my garden, which were as delicious as they were gorgeous!

Artichoke and Olive Pasta Salad
1 pound pasta
1 cup marinated artichoke hearts, quartered
1/2 cup Kalamata olives, chopped
1/4 cup feta cheese
2 Tbsp fresh basil
Italian dressing, recipe follows

  1. Cook pasta according to package directions and let cool. Toss with quartered artichoke hearts, chopped Kalamata olives, feta cheese, fresh basil, and Italian dressing.
  2. Refrigerate until ready to serve.

Italian Dressing
1/4 cup extra virgin olive oil
1/8 cup white wine vinegar 
2 shakes dried basil
2 shakes dried oregano
1 tbsp water
Pinch sugar
Salt, pepper

  1. Whisk together all ingredients, seasoning to taste.
