This cocktail/mocktail is a whole entire vibe. One sip and you’re instantly transported to a tropical vacation! You’ll be delighted to know that I made both cocktail and mocktails version of this refreshing drink. You don’t even need a cocktail shaker!
“If you like piña coladas

I of course named this drink after one of my favorite songs of all time, Escape (better known as The Piña Colada Song). If like Piña Coladas, you will love this cocktail! My mom and I sipped on our Pineapple Escapes on our new beach at the lake house. She nicknamed it Bruno Beach (inside joke!) and for Mother’s Day this year, I hired my friend Anamieke at Enchanted Farmhouse to make this custom sign for the beach. Isn’t it fun?
Pineapple Escape Cocktail
1.5 oz coconut rum
4 oz pineapple juice
3 oz lemon Italian sparkling soda or ginger ale
- Fill a glass with ice. Measure ingredients into glass and give it a stir. Garnish with a strawberry or pineapple spear.
