Looking for an easy, healthy summer salad? You found it! My Watermelon Mint Feta Salad is incredibly refreshing. The secret ingredient? Fresh lime juice!
This is a super satisfying dish that only takes about five minutes to make. You really don’t need to know how to cook to pull off this elegant dish. This would be fantastic paired with my Perfect Grilled Chicken, Coconut Shrimp, Rosemary Grilled Salmon, or Fish Tacos.
I used my homegrown mojito mint in this recipe, which I swear I will blog about any day now. I adore mint in just about everything but it’s particularly nice here with watermelon and lime. I can’t wait for you to try this combo!
Watermelon Mint Feta Salad
1 small watermelon
4 oz feta cheese
1/4 fresh mint, chopped
1 Tbsp olive oil
1 medium lime
Hawaiian sea salt, black pepper
- Slice watermelon into 1/2″ – 1″ thick slices, cut off the rinds, then cut into small cubes. Transfer watermelon cubes to a large bowl.
- Sprinkle feta cheese and mint on top. Drizzle olive oil on top, then squeeze one whole lime right on top. Season with Hawaiian sea salt and black pepper, toss, and serve.
