Minnie Cheesecakes

These Minnie Cheesecakes are most magical dessert on the internet! 

As the creator of Disney Dinners and a lifelong Disney enthusiast, I’ve made a lot of adorable Disney desserts in my day but I think this recipe takes the cake. Here my mini chocolate chip cheesecakes, baked in Minnie Mouse’s signature red and white polka dot cupcake holders, are topped with delicious vanilla whipped cream and Oreos. These Minnie Cheesecakes are as delicious as they are adorable! They’re the perfect way to celebrate Disneyland’s anniversary today.

Now you can serve these immediately but something really magical happens to Oreos when they’re left in frosting or whipped cream overnight in the fridge. If you know, you know. They totally transform!

I was worried that the Oreo “ears” wouldn’t stay upright when held with whipped cream but I was totally wrong. They stayed perfect in the fridge for three days! One bite and you’ll feel like you’ve been transported to the most magical place on earth.

Minnie Cheesecakes
Makes 24
24 Vanilla Wafers
16 oz cream cheese, softened (full fat! don’t skimp!)

3 eggs, separated
1 14 oz can sweetened condensed milk
1/4 cup freshly squeezed lemon juice
1/2 tsp salt
1.5 cups mini chocolate chips
Whipped cream, recipe follows
48 Oreos

  1. Preheat oven to 275 degrees. Put cupcakes liners in two muffin tins. Place a vanilla wafer in each cupcake liner.
  2. In a large bowl, beat softened cream cheese until light and fluffy. Add eggs yolks and sweetened condensed milk. Beat until smooth. Stir in freshly squeezed lemon juice.
  3. In a medium sized glass bowl, beat egg whites with salt until soft peaks form. Carefully fold egg whites into cheesecake mixture. Fold in 1 cup of chocolate chips.
  4. Fill muffin tins 2/3 full with cheesecake mixture. Sprinkle remaining chocolate chips on top. Bake at 275 for 20 minutes. Cool in tins; remove from tins and chill.
  5. When completely chilled, make whipped cream according to recipe below, then pipe onto cheesecakes. Top each cheesecake with two Oreo “ears” and refrigerate until ready to serve.

Whipped Cream
1.5 cup heavy whipping cream
1/4 cup + 2 Tbsp powdered sugar
1.5 tsp vanilla extract 

  1. Beat all ingredients until soft peaks form.
