Hearty Apple Oat Muffins

Looking for a fantastic muffin recipe to bake this fall? Make these Heart Apple Oat Muffins loaded with cinnamon and finished with an easy maple glaze.

These muffins are perfect for an afterschool snack or quick breakfast on the go. The best part? I found that they’re even better the next day! They’re crazy moist thanks to all the delicious diced apple (from 1 large or 2 small apples).

You want fairly small apple pieces here. No need to peel the apples either AND you don’t have to worry about the temperature of your butter because this recipe uses melted butter.

You could skip the maple glaze I suppose but it’s such a nice touch and only takes a minute to stir together! Look how delicious. I would smother this maple glaze on just about anything.

This is definitely going to be a go-to recipe for me every fall when apples are in season.

Hearty Apple Oat Muffins

1 1/3 cups all-purpose flour
1 cup quick-cooking oats
2/3 cup granulated sugar
1 Tbsp baking powder
2 tsp ground cinnamon
1/2 cup milk
1/3 cup butter, melted
1/4 cup maple syrup
1 egg, lightly beaten
2 cups chopped apples
Maple glaze, recipe follows

  1. Preheat oven to 400 degrees. Grease one 12-cup muffin tin or line with paper liners and spray with nonstick spray.
  2. In a large bowl, whisk together flour, oats, sugar, baking powder, and cinnamon.
  3. In a small bowl, whisk together milk, melted butter, maple syrup, and an egg.
  4. Stir wet ingredients into dry ingredients just until combined. Gently fold in apples.
  5. Spoon mixture into prepared muffin tin. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes before removing. Cool completely, then finish with maple glaze.

Maple Glaze

1/3 cup powdered sugar
2 Tbsp maple syrup

  1. Whisk together powdered sugar and maple syrup until smooth.

    Hi! First time making these- big question- I hope that when it says one TABLESPOON baking powder, that is correct? 🙂

      Yep! Tbsp is the abbreviation for tablespoon and tsp is the abbreviation for teaspoon. Hope you enjoy the muffins!
